Granola

I am going to share with you two recipes. Both slightly different but yummy in their own ways.  Granola is great with milk for breakfast, added to ice cream or yogurt, made into granola bars, or eaten as a snack!  Make up a big batch and keep it in the pantry.

Ingredients – Granola I

  • 3c oats
  • 1c wheat germ
  • 1/2c chopped walnuts or other nuts
  • 1/2c raisins
  • 1/2c dried cranberries
  • 1/4c maple syrup
  • 2tb molasses
  • 1tsp cinnamon

Method:

  • Preheat oven to 300F.  If your wheat germ and nuts are not yet toasted, toast them now in a dry skillet over high heat until fragrant.
  • Combine all ingredients, mix well.  Transfer to a greased cookie sheet or 9×13 dish.  Bake, stirring often, until golden brown – about 25 minutes.

Ingredients – Granola II

  • 8c oats
  • 2c nuts
  • 3c additional dry ingredients such as wheat germ, flax seeds, flour, bran, etc.
  • 1 1/2 tsp salt
  • 2tb cinnamon
  • 1c honey
  • 1c coconut oil or butter
  • Dried fruit of choice, such as raisins, cranberries, etc.

Method:

  1. Preheat oven to 325F.
  2. Stir dry ingredients together, except the dried fruit.
  3. Heat honey and butter or oil together until oil/butter has melted and honey is runny.  Mix into dry ingredients.
  4. Divide mixture between two rimmed cookie sheets and bake for 25-30 minutes until dry,  Mix a few times as it bakes.
  5. Add dry fruit. Enjoy.
