Fluffy Buttermilk Pancakes

  • 3c flour
  • 3tb white sugar or honey
  • 3 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3c buttermilk
  • 1/2c milk
  • 3 large eggs
  • 5tb melted butter


  1. Preheat your griddle or skillet over medium high heat.
  2. Combine ingredients.  Mix until combined.
  3. Drop a couple droplets of water on the skillet to test its readiness.  If they dance across the surface, it’s time to oil the skillet and drop the batter in, 1/4c at a time.
  4. Flip pancakes when you begin to see bubbles forming on the top of the batter you dropped in.  Cook until pancake is golden on the flipped side.

For fluffier pancakes, let eggs and buttermilk come to room temperature before mixing.  Add in fruit or nuts.
