Corn & Green Bean Casserole

When we attend potlucks or holiday parties, this is the dish I almost always bring and it’s always a hit.  We also serve it at each major holiday at our home.

Ingredients:

  • 1 pint whole corn kernels
  • 1 pint green beans, french style (or regular will work)
  • 1/2c chopped onion
  • 1-14.5oz or homemade equivalent cream of celery soup
  • 8oz sour cream
  • ½ c cheddar cheese, grated
  • 1 sleeve of Ritz (or similar) crackers, crushed
  • 1 stick of butter
  • ½ c sliced almonds, optional

Method:

  1. Preheat the oven to 350F.
  2. Mix all ingredients minus the ritz, stick of butter and almonds.
  3. Layer the ingredients in a 8×8 or 9×9 baking dish.
  4. Melt the butter in a skillet over medium high heat. Once it’s melted, pour the crushed ritz crackers and almond slices in the butter. Fry them until golden and buttery.
  5. Pour the ritz and almonds over top of the casserole dish.
  6. Bake for 30 minutes.

*You can make the casserole the night before and store in the fridge overnight. Just do the cracker topping right before it goes in the oven so it doesn’t get soggy.
