Cranberry Carrot Slaw

This was gone in no time and left my kids asking to make it again with our very next meal!


  • 1/2c unsweetened pineapple juice
  • 2tb honey
  • 1tb lemon juice
  • a small splash of apple cider vinegar (1tsp max)
  • 3c shredded carrots
  • 1/2c dried cranberries


  1. Combine all.  Make this ahead of your meal and let it chill in your fridge so the flavors can combine well.
