Tomato Soup

This closely mimics the taste of a certain storebought canned tomato sauce that many people grow  up eating.  Sometimes I just crave a grilled cheese sandwich and tomato soup with macaroni.  I am not pleased with the ingredients in the canned soups and this isn’t too hard to whip up on my own.

Ingredients:

  • 3tb butter
  • ½ small onion, diced
  • 3tb flour
  • 1 quart + 1 pint tomato sauce
  • 1c chicken broth
  • ½ small onion, diced
  • ¼ ts basil
  • ¼ ts thyme
  • 2tb honey

Method:

  1. Melt the butter over medium high heat.  Once melted add the onion and cook until soft.
  2. Whisk in the flour until a soft paste forms.  Let it cook a bit until lightly toasted, then pour in your tomato sauce.
  3. Whisk once you add the tomato sauce to release anything that may have stuck on the bottom of the pan, then add the remaining ingredients.
  4. Simmer the soup for about 15-20 minutes.
