We really enjoy cooking these over the grill or campfire in foil packets, and a few weeks ago I even threw them in the firebox of our wood stove for lunch. You can also cook this up nicely in a dutch oven! I am modifying this from the recipe in Scratch Cooking because it calls to marinade the chicken in 2 cups of olive oil. My ever-frugal self can’t part with two cups of oil in one sitting, so I came up with this modified version instead. And, it still tastes like I remember.
Ingredients:
- 4 large boneless, skinless chicken breasts
- olive oil
- lemon juice
- red onion
- 4-6 garlic cloves, minced
- salt and pepper to taste
- steak seasoning, if you wish
Method:
- Prepare foil sheets by laying them out flat. Slice onion into thick wedges.
- Place a chicken breast on the foil, sprinkle salt, pepper and steak seasoning on both sides. Drizzle olive oil and lemon juice over top of the breast, sprinkle a clove or two of minced garlic over the top and place a few wedges of red onion on top.
- Bring up the top and bottom of the foil, place them together over the top of the chicken and roll them down. Then, roll the sides in to create a packet. Be careful not to puncture the packet because the food inside will burn.
- Place on the grill, in the firebox of your wood stove, or bake in a 350F oven for about 20-30 minutes.
