Everyone has their favorite go-to recipes for sweets, right? After searching for years, and trying many different recipes, I have combined several into one that I just love for chocolate chip cookies. Cookies bake up nice and puffy, they are deliciously soft and stay fresh overnight. I like to make a batch of dough, form it into a log, and freeze it so I can cut off a couple cookies at a time to bake.
Ingredients:
- 3/4 c butter, softened
- 1c brown sugar
- 1/2c white sugar
- 1 egg
- 1 egg yolk
- 1tb vanilla
- 2c all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2c chocolate chips
Method:
- Cream the butter until fluffy. Add the sugars and continue to beat until light
- Add the egg and egg yolk, then the vanilla. Continue beating at a medium speed until everything is well combined.
- In a separate bowl, sift the flour, baking soda and salt together.
- Add the sifted flour to the butter mixture in batches, ensure the first batch is well combined before adding the next.
- Mix in your chocolate chips until just combined.
- Chill dough for at least an hour.
- Preheat oven to 325 F. Line a cookie sheet with parchment paper.
- Place balls of cookie dough (about 2 tablespoons or so) on the parchment paper, separated by an inch or so. The cookies won’t spread too far.
- Bake for about 11 minutes. Your time may vary depending on your oven, so check them around 8 minutes to prevent overcooking.
- Cookies are done when they begin slightly browning on top – just a hint of a golden brown. Remove cookies from the oven and let them cool on the cookie sheet before moving.
