A sweet neighbor brought this over to me one day after having a baby because it was rich in iron and would be helpful in my recovery. It was so delicious I make it over and over again. Just combine ingredients and top with the vinaigrette.
- Fresh baby spinach
- Raspberries
- Slivered or sliced almonds
- Raspberry-Walnut Vinaigrette (I keep trying to find a suitable recipe, but until that is a success, I love Ken’s Steakhouse brand)
- I can’t remember if this was originally included, but I also throw on some mozzarella cheese.
