Quick Dinner Rolls

Here is a recipe that will put dinner rolls on your table in about 30-40 minutes (including baking time).  These rolls were so soft and puffy – perfect to accompany nearly any dish.  I baked 9 of them in a square, glass casserole dish.  The remaining 3 I put in a muffin tin.  I love letting the rolls touch when they bake, it keeps them so soft.

Ingredients:

  •  1c plus 2tb warm (not hot!) water
  • 1/3c vegetable oil
  • 2tb yeast
  • 1/4c sugar
  • 1 egg
  • 3-4c flour, divided
  • 1/2 tsp salt

Method:

  1. Preheat your oven to 400F.
  2. Mix water, oil, yeast and sugar together in your mixing bowl.  Let it rest for about 10 minutes.
  3. Add the egg, about 2 cups of flour and the salt.  Mix well.
  4. Add remaining flour until a dough forms and mix until soft and still slightly sticky.
  5. Divide into 12 parts, shape into round balls and place onto a greased casserole dish, muffin tin, baking sheet (or parchment paper), let rise for another 10 minutes or so.
  6. Place in the oven and bake for 10 minutes.  Remove the rolls from the oven, wipe them with butter, then return until done.  Your method of baking will change the time it takes to bake.  If you used a casserole dish and the rolls are touching once they have risen, you may need to bake a few extra minutes (15-18 minutes or so).  If your rolls look like they might brown a bit too much before they are done, you can place foil over them.
  7. Once done, let them sit and cool for a few minutes.  Take some time to sprinkle some freshly grated parmesan cheese on them if you like.
