Breaded Chicken Patties

We always used to buy those long packages of breaded chicken patties that we could heat up and make a sandwich out of. They were handy for quick meals and admittedly tasty. But then I read the ingredients, and like many foods we once bought premade, we stopped buying them and I went on the […]

Breadcrumbs

Why buy bread crumbs when it’s so darn easy to make them yourself?

I make both plain and seasoned, out of both white and whole wheat bread, in traditional style itty bitty crumbs and the larger “panko” style. I have found the subtle differences to enhance different recipes, so I will share them here with […]

Mom’s Beef Stew

When I think of beef stew, this is what I crave. I don’t often buy beef for stew meat, so we don’t eat this too much, but that helps to keep this meal a special one. I remember my mom making this when I was a kid, and I was so happy to have her recipe […]

Dumplings

I am going to share two types of dumplings. The first is more of a bready dumpling I like to cook on beef stew. The second is an egg dumpling that resembles pasta more than it does anything else, but it’s not rolled or cut into a pasta shape. It’s rather thick, but formed by […]

Beef Stew Seasoning

Forget buying those packets of beef stew seasoning, make your own!

2c all purpose flour 4 tsp oregano 2 tb basil 4 1/2 tsp each: salt, pepper, garlic powder, onion powder and paprika 2 tb celery seed 2 tsp powdered rosemary

Method:

Combine all in a jar, mix well and store in your pantry. […]

Dry Gravy Mix

Gravy made from meat drippings is always going to be the best route for flavor and less fake stuff, but sometimes recipes call for dry gravy mixes, and sometimes you forget and toss the drippings and need gravy in a pinch. This dry mix is great for that. You can make chicken or beef mixes […]

Fancy Shepherds Pie

I started with this recipe from Menu Musings, but I can’t ever leave anything well enough alone. I am feeding a big family, so I beefed up the vegetables and sauce ingredients while keeping the meat portion the same. Anything to make that meat stretch, right? I didn’t do anything fancy to the mashed potatoes […]

The faces and views of hunting this year

While hunting season isn’t over yet, I am already reminiscing this season. It was so full of so many firsts – the first year hunting on our own property (for years my husband and dad would make a annual trip ‘up north’ about 4 hours away for hunting on private land and it was a […]
