Sticky Chicken

This is one of those meals that are always a hit, but I don’t make it all the time because it contains sugar.  But if you are looking for a family pleaser that everyone will enjoy, give this one a try.

I bet this would also be great turned into a stir fry using this sauce.  Add some sugar snap peas, carrot, peppers – I need to try that!

Ingredients:

  • 3-4 chicken breasts, cut into bite sized pieces
  • 1tb vegetable oil
  • 1 egg, beaten
  • 3tb cornstarch
  • 3-4 c cooked rice

Sauce Ingredients:

  • 6tb honey
  • 4tb ketchup
  • 3tb sugar
  • 1tb brown sugar
  • 2tb white vinegar
  • 3t soy sauce
  • 1/2 ts salt
  • 1 ts garlic powder
  • 1tb cold water + 2t cornstarch

Method:

  1. Whisk all the sauce ingredients together in a small saucepan and heat over medium heat.
  2. Put the egg, cornstarch and flour in separate containers – I prefer pie pans.
  3. Heat oil over medium-high heat in a large skillet.
  4. Dip chicken in egg, flour, then corn starch.  Add to heated skillet and cook until heated through, stirring regularly. Once cooked through, set aside and add more chicken to the skillet if necessary.
  5. Once your sauce mixture has heated and thickened, mix the chicken in it.  There will be enough sauce to glaze the chicken – if you want a saucier recipe, double (triple?) the sauce ingredients.

This is great served over rice.
