This is a quick, tasty soup that comes together easily using leftover mashed potatoes.
Ingredients:
- 2 tb butter
- 2 tb flour
- 2c milk
- 1/4 c cheddar cheese, shredded
- 1c leftover mashed potatoes
- 2 tb sour cream
- Salt and pepper to taste
- Additional toppings to include crispy bacon bits, chives, additional cheese, minced onion, etc.
Method:
- In a large saucepan melt the butter over medium heat. Whisk in the flour and cook until bubbly.
- Slowly whisk in the milk. Continue stirring as the liquid thickens.
- Add cheese and mashed potatoes, stirring well to remove clumps.
- Remove from heat, stir in the sour cream, and season with salt and pepper.
- If the soup is too thick for your liking, add enough milk to thin it out. Add toppings, if any, and eat.
