Loaded Potato Soup (using leftover mashed)

This is a quick, tasty soup that comes together easily using leftover mashed potatoes.

Ingredients:

  • 2 tb butter
  • 2 tb flour
  • 2c milk
  • 1/4 c cheddar cheese, shredded
  • 1c leftover mashed potatoes
  • 2 tb sour cream
  • Salt and pepper to taste
  • Additional toppings to include crispy bacon bits, chives, additional cheese, minced onion, etc.

Method:

  1. In a large saucepan melt the butter over medium heat. Whisk in the flour and cook until bubbly.
  2. Slowly whisk in the milk. Continue stirring as the liquid thickens.
  3. Add cheese and mashed potatoes, stirring well to remove clumps.
  4. Remove from heat, stir in the sour cream, and season with salt and pepper.
  5. If the soup is too thick for your liking, add enough milk to thin it out.  Add toppings, if any, and eat.
