This is a meal that comes together quick, is hearty and satisfying. Make it vegetarian by leaving out the meat, or you can make it as a side without the meat too. This is really something you can throw together to your taste – add more or less of the ingredients… you won’t hurt it. This is a great use for leftover rice!
Ingredients:
- 4c cooked rice
- 2 large eggs, scrambled (or more, if you like eggs)
- 1c peas
- 2tb shredded carrot
- 1/2 c onion, chopped
- 2 tb butter
- 2 tb soy sauce
- salt and pepper to taste
Method:
- Melt butter over medium-high heat. Add the rice and stir it regularly as it begins to become fried. If it sticks too much, add a little more butter. Ideally it will get a little bit crispy and golden colored.
- Add the remaining ingredients, mix well, and serve.
