Chicken Fried Rice

This is a meal that comes together quick, is hearty and satisfying.  Make it vegetarian by leaving out the meat, or you can make it as a side without the meat too.  This is really something you can throw together to your taste – add more or less of the ingredients… you won’t hurt it.  This is a great use for leftover rice!


  • 4c cooked rice
  • 2 large eggs, scrambled (or more, if you like eggs)
  • 1c peas
  • 2tb shredded carrot
  • 1/2 c onion, chopped
  • 2 tb butter
  • 2 tb soy sauce
  • salt and pepper to taste


  1. Melt butter over medium-high heat.  Add the rice and stir it regularly as it begins to become fried.  If it sticks too much, add a little more butter.  Ideally it will get a little bit crispy and golden colored.
  2. Add the remaining ingredients, mix well, and serve.
