Honey Blueberry Muffins

These were a big hit with both the adults and the kids.  I found them to be satisfyingly sweet without being sickeningly sweet, moist and all around delicious.  You can use whole wheat or all purpose flour.  I used coconut oil but vegetable oil would work fine, too.  Switch out the fruits for different tastes, or add to the blueberry.


  • 1-1/2c flour
  • 2ts baking powder
  • 1 egg
  • 1/2c milk
  • 1/4c coconut oil
  • 1/2c honey
  • 1/2c blueberries
  • 1 ts almond extract
  • 1/2ts salt
  • 1/2ts nutmeg
  • 1 ts. cinnamon


  1. Combine all ingredients and fill greased or lined muffin cups 2/3 full.
  2. Bake in a 400F oven for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
