Breakfast Sausage

It is entirely possibly to make your own bulk breakfast sausage that you can then form into patties or brown and crumble into recipes.


  • 2lb ground pork, at least 20% fat.
  • 1tb ground sage
  • 2ts marjoram
  • 2ts thyme
  • 2ts red pepper flakes, optional
  • ½ ts brown sugar
  • ½ ts salt
  • ½ ts pepper


  1. Mix meat and seasonings. Fry up bits at a time to get the flavor you are looking for, adjust seasonings between tastings. When you’ve got them seasoned just as you want them, form into patties and fry on medium heat 6 minutes per side.
