Puffed Quinoa Peanut Butter Balls

I can’t say enough about how good these were!  Goodness I nearly ate the whole batch myself the night I made them.  In fact, I will make more tonight!  These snacks are a great healthy energy booster and crave curber (is that a word?).  Plus they are just plain good.  That’s really the only explanation needed.

Ingredients:

  • 1c puffed quinoa
  • 1/3c peanut butter, give or take
  • 3tb maple syrup, give or take
  • 1tsp vanilla extract

Method

  1. Combine all ingredients and form into balls.  The mixture should resemble a hard, shapable dough like play dough.  Balls should be able to be formed by squishing a small amount together and rolling it between your hands.
  2. Roll balls the size of your liking until you run out of mix.  Roll, eat one, roll two, eat one, try to roll three, you get the idea.  Chill in the fridge.

If you run into trouble with the mixture not rolling well, put it in the fridge to firm up for about 15 minutes.  If you are working in a hot kitchen, the peanut butter may get too runny and make it hard to roll balls.

You can roll these in chocolate, if you wanted.
