Of cooking beans for tonight’s dinner. So, I had to buy some in order to keep dinner on track, time-wise. Aside from paying over a buck per 15oz can (cost of convenience I suppose…. Dry beans are so much cheaper per cooked equivalent) I noticed the sodium content was way up there per half cup serving for what most consider a healthy food. Of course this can be reduced by rinsing the beans prior to cooking with them, which I did, but did you know beans don’t NEED salt if you are canning them yourself? And consider the recipes that suggest not draining the beans to take advantage of the starchy liquid that is helpful for thickening - you’re adding all that sodium!

Beans that are already salted can make it difficult to manage salt in your meals, especially if you need to add salt somewhere in your recipe. Combining several pre-salted convenience ingredients can easily lead to a meal that looks healthy in the outside but may be full of sodium or other hidden hazards.

Of course you should taste as you go, and only add salt as needed, and for some people like heart patients, sodium can be a real challenge to control especially when relying on items purchased from the store which is almost everyone!

Cooking with dry beans and canning dry beans yourself is one way to not only save money, but create a low sodium item that can truley contribute to healthier eating.

I’ve got a reel about canning dry beans but I can do a recap if you’re interested as it’s almost time to can more beans for my shelf.

Hopefully this is helpful to someone!

I was home with Amelia and Johnny this morning whi I was home with Amelia and Johnny this morning while the biggest boys were at work and the mid-boys were at school. I deep cleaned the fridge, even moved it and cleaned the floor under it and vacuumed the coils. The littles were so happy to play with all the toys themselves 😆. Then we went outside and I cleared the easement with loppers to make it easier to walk and ride bikes to the trail. I would normally use my chainsaw but, I behaved.

We came up before the bus dropped the kids off and Johnny sat patiently waiting until they arrived 😆 First day for the mid-kids was a success!
