{"id":677,"date":"2015-01-25T02:10:57","date_gmt":"2015-01-25T02:10:57","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=677"},"modified":"2016-12-23T04:39:25","modified_gmt":"2016-12-23T04:39:25","slug":"honey-almond-chicken","status":"publish","type":"post","link":"https:\/\/www.k7farm.com\/blog\/?p=677","title":{"rendered":"Honey Almond Chicken"},"content":{"rendered":"<p>This recipe was one of the first &#8220;complicated&#8221; recipes I tried soon after I began cooking for real. \u00a0I say it was complicated because I was used to opening a can of this and adding a packet of that and cooking until done &#8211; here I had to actually use real, basic ingredients to create a meal. \u00a0It turned out fantastic then, and I continue cooking it many years after.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2tb butter<\/li>\n<li>2tb olive oil<\/li>\n<li>3 boneless, skinless chicken breasts<\/li>\n<li>salt and pepper to taste<\/li>\n<li>2 medium yellow onions, or 1 large, sliced<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1c ground almonds<\/li>\n<li>1tb dry basil<\/li>\n<li>1\/2 tsp pepper<\/li>\n<li>1\/2 c honey<\/li>\n<li>1-1\/2 chicken broth<\/li>\n<li>2tb cornstarch<\/li>\n<li>juice of one lemon*, or bottled lemon juice<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350F<\/li>\n<li>Melt butter and add olive oil in a skillet over medium high heat. Season chicken with salt and pepper, then brown on both sides. \u00a0Remove and set aside.<\/li>\n<li>In the same skillet, add the onion and cook until translucent. \u00a0Add more butter and olive oil in equal amounts if necessary. Add garlic and cook until fragrant &#8211; about 30 seconds. \u00a0Reduce heat to medium.<\/li>\n<li>Add almonds, basil, pepper and honey. \u00a0Stir until well blended.<\/li>\n<li>Combine corn starch and chicken broth in a small container or cup, whisk well to distribute the cornstarch.<\/li>\n<li>Turn the heat up to medium high on the skillet with the almond honey mixture, then add the chicken broth mixture to it. Cook until sauce thickens.<\/li>\n<li>Remove skillet from heat and stir in lemon juice.<\/li>\n<li>If your skillet is oven proof, place your browned chicken in the skillet and spoon sauce over to cover it completely. \u00a0Or, place the chicken in a casserole dish and pour the sauce over top of it.<\/li>\n<li>Bake for one hour.<\/li>\n<\/ol>\n<p>* You may need zested lemon in future recipes. \u00a0Before juicing, zest the entire surface of your lemon. \u00a0You may then set this out to dry or place it in a very low oven until crispy and dried, then save in an empty herb jar.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe was one of the first &#8220;complicated&#8221; recipes I tried soon after I began cooking for real.
