{"id":1384,"date":"2015-12-21T03:25:44","date_gmt":"2015-12-21T03:25:44","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=1384"},"modified":"2016-12-23T04:39:25","modified_gmt":"2016-12-23T04:39:25","slug":"irish-chicken-stew","status":"publish","type":"post","link":"https:\/\/www.k7farm.com\/blog\/?p=1384","title":{"rendered":"Irish Chicken Stew"},"content":{"rendered":"<p>When you think of &#8216;stew&#8217; most times your mind often thinks about red meat stews, but don&#8217;t forget about chicken!\u00a0 This is a hearty, tasty stew that will warm you up and keep you full for hours.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>For the chicken<\/p>\n<ul>\n<li>\u00a01\/2 tsp kosher salt<\/li>\n<li>1\/2 tsp black pepper<\/li>\n<li>1\/2 tsp dried thyme<\/li>\n<li>1\/8 tsp ground nutmeg<\/li>\n<li>1\/3c all purpose flour<\/li>\n<li>2-1\/2 lb boneless skinless chicken thighs or breasts, trimmed of excess fat<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p>For the stew:<\/p>\n<ul>\n<li>3 slices bacon, chopped<\/li>\n<li>1\/2 c all purpose flour<\/li>\n<li>1-11.5oz guinness beer<\/li>\n<li>1-lb carrots, cut into 1-inch chunks<\/li>\n<li>2c sliced onion<\/li>\n<li>8oz small cremini mushrooms, halved (optional)<\/li>\n<li>5 cloves garlic, minced<\/li>\n<li>1-1\/2 tsp dried thyme<\/li>\n<li>1-1\/2 tsp dried sage<\/li>\n<li>1-1\/2 tsp kosher salt<\/li>\n<li>1\/4 tsp black pepper<\/li>\n<li>1-1\/3 c chicken broth<\/li>\n<li>2c frozen peas<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Combine flour and seasonings for the chicken in a bowl. Heat a skillet over medium heat with enough olive to lightly oil the bottom of a skillet.\u00a0 Dredge the chicken in the flour mixture, then place in the skillet.\u00a0 Brown thoroughly on all sides, remove chicken and place them in the pot you will be cooking your stew in.<\/li>\n<li>Brown bacon in the same skillet, once cooked remove bacon and keep drippings.\u00a0 Place the bacon in the pot you will be cooking your stew in.<\/li>\n<li>In the drippings, add sliced onion.\u00a0 Add additional oil if necessary. Cook until soft and translucent.\u00a0 Add garlic, cook until fragrant (about 30 seconds). Place onions in soup pot.<\/li>\n<li>In remaining fat, add the flour.\u00a0 If need be, add a couple more tablespoons of oil to the skillet so it can absorb the flour.\u00a0 You want to form a roux &#8211; a loose paste that will ultimately thicken your stew.\u00a0 Add more flour or oil if necessary to create the right consistency.\u00a0 You don&#8217;t want a thick paste that bunches up into a ball but you don&#8217;t want a thin liquid either.\u00a0 Ideally if you slide your whisk across the bottom of the pan, the roux will stay separate as the whisk slides through and gradually re-unite. Cook the flour over medium heat until it turns a dark brown.\u00a0 Stir frequently and watch it &#8211; once it browns it isn&#8217;t hard to burn it.<\/li>\n<li>Pour in the guinness.\u00a0 Stir until all the lumps are gone and the alcohol has sizzled off.\u00a0 Pour the contents into the pot you will be cooking your stew in.<\/li>\n<li>Add the remaining ingredients (except the peas) for the stew and simmer until chicken pieces are falling apart.<\/li>\n<li>Add peas at the end and cook just until they are heated through &#8211; about 5 minutes longer.<\/li>\n<\/ol>\n<p>This was fantastic served over mashed potatoes!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When you think of &#8216;stew&#8217; most times your mind often thinks about red meat stews, but don&#8217;t forget about chicken!
