Venison is an extremely lean meat, so you end up with little to zero waste. \u00a0Corned venison is fairly simple &#8211; you boil the brine and let it cool to room temperature before setting your meat in it. \u00a0Then you let it sit for 5-7 days in your fridge. \u00a0Then cook it up &#8211; I prefer a crockpot. \u00a0There is little room for error. \u00a0I prefer using roasts from the hindquarters, but you can corn any roast.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/2 gallon of water<\/li>\n<li>1c kosher salt<\/li>\n<li>1\/3c white sugar<\/li>\n<li>1 tsp Intsacure #1 (or similar cure) per 5lbs of meat<\/li>\n<li>1tb cracked black pepper<\/li>\n<li>12 bay leaves<\/li>\n<li>1tb red pepper flakes<\/li>\n<li>1tb thyme<\/li>\n<li>1 cinnamon stick<\/li>\n<li>6 cloves<\/li>\n<li>5 minced garlic cloves<\/li>\n<li>3-5lb venison roast (or a couple smaller roast to equal the same weight)<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Boil all ingredients except the meat. \u00a0Turn off heat, cover and let cool to room temperature. \u00a0This may take a couple of hours.<\/li>\n<li>Trim roast of any silverskin and visible fat.<\/li>\n<li>Once brine is cooled, pour it into a glass container and insert your roasts. \u00a0Be sure the roasts are submerged. \u00a0Cover and set in the fridge for 5-7 days. I like to use glass gallon jars for this.<\/li>\n<\/ol>\n<p><strong>To Prepare:<\/strong><\/p>\n<p>The only way I have ever prepared corned beef or corned venison has always been in a crockpot. \u00a0This ensures I don&#8217;t mess it up. \u00a0When we purchase it at the store, its quite expensive. \u00a0And making it at home &#8211; it takes a lot of effort to process a deer. \u00a0I don&#8217;t want to risk screwing anything up \ud83d\ude09 \u00a0So I don&#8217;t change what works. \u00a0I take the roast out of the brine and place it into the crockpot. \u00a0I add about half a cup of water and add 2 tablespoons of pickling spice on top of the roast. \u00a0Then I add some carrots and potatoes, then quarter a head of cabbage and set that on top. \u00a0I put the lid on the crockpot and walk away. \u00a0About 8-10 hours later, dinner is served.<\/p>\n<p>If you have leftovers, you may enjoy making corned venison\u00a0hash &#8211; I put some olive oil and butter (same ratio of each) in a skillet and heat it over medium-high. \u00a0Then I add leftover potatoes and carrots, and dice up some corned venison, throw it in the skillet, season with some pepper and seasoned salt and cook until heated through and a bit crispy. \u00a0I move the hash away from the center of the skillet and add an egg or two, scramble them up if you wish and heat until cooked through, and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p> #gallery-2 { margin: auto; } #gallery-2 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 50%; } #gallery-2 img { border: 2px solid #cfcfcf; } #gallery-2 .gallery-caption { margin-left: 0; } \/* see gallery_shortcode() in wp-includes\/media.php *\/ <\/p>\n<p>This is simply marvelous.
