{"id":429,"date":"2014-12-10T06:10:27","date_gmt":"2014-12-10T06:10:27","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=429"},"modified":"2016-12-23T04:39:29","modified_gmt":"2016-12-23T04:39:29","slug":"venison-stew","status":"publish","type":"post","link":"http:\/\/www.k7farm.com\/blog\/?p=429","title":{"rendered":"Venison Stew"},"content":{"rendered":"<p>I didn&#8217;t get a picture of this. \u00a0I&#8217;m not really used to taking lots of pictures of food, but I am trying because I realize it can be helpful to see what you might consider cooking. \u00a0All I can say about venison stew is &#8211; yum!! \u00a0Hearty and oh so good. Ingredients:<\/p>\n<ul>\n<li>2lbs stew meat<\/li>\n<li>flour, salt and pepper mixed together to coat stew meat<\/li>\n<li>couple tablespoons of vegetable or olive oil<\/li>\n<li>2 onions, chopped<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>1\/2 c dry wine<\/li>\n<li>5c beef broth, or 5c water and 5 tsp. beef bouillon (or 5 cubes)<\/li>\n<li>2 bay leaves<\/li>\n<li>1\/2 tsp oregano<\/li>\n<li>salt and pepper to taste<\/li>\n<li>1 tb Worcestershire sauce<\/li>\n<li>6-7 potatoes, peeled and cubed<\/li>\n<li>1 lb carrots, peeled and sliced<\/li>\n<li>1 pt. green beans (about 1lb, or two cans)<\/li>\n<li>1\/4 c flour<\/li>\n<li>1\/4 c water<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ol>\n<li>Heat enough oil to coat the bottom of a skillet over medium high heat. \u00a0Toss stew meat in flour, with enough salt and pepper to taste. \u00a0I do roughly 1 cup of flour, 1 tsp. salt and about half a tsp. of pepper.<\/li>\n<li>Once oil is hot, add stew meat. \u00a0Brown all sides of the meat, but work in batches do you don&#8217;t reduce the temperature of the oil too much and end up cooking the meat. \u00a0You just want to brown it. \u00a0You want to hear it sizzle. \u00a0As soon as you put it in the skillet, leave it alone until a brown crust forms. \u00a0Don&#8217;t immediately move it or it won&#8217;t brown properly.<\/li>\n<li>Once all your meat has browned, remove it and set it aside, add additional oil if necessary and saute your onion and garlic until translucent.<\/li>\n<li>Turn the heat to high, wait a moment and when the pot and contents are good and hot (but not burning) add the wine. \u00a0It will sizzle and steam, so beware. \u00a0You are deglazing your pan. \u00a0Grab a whisk and make sure all the brown bits from the bottom of the skillet get loosened up. \u00a0Cook until the wine is slightly thickened, a few minutes, then reduce heat. \u00a0Add stew meat and the wine to a stock pot or crock pot. \u00a0Add all the remaining ingredients except the last two. \u00a0Bring it to a boil and let it simmer\u00a01-1\/2 to 2\u00a0hours or cook on low in a crockpot 8 hours.<\/li>\n<li>Taste your stew, add additional seasonings if necessary. \u00a0Then combine the 1\/4 c water and flour to make a paste, then add that to your stew. \u00a0It should thicken it up nicely. \u00a0Mix it in well. \u00a0If that doesn&#8217;t thicken to your liking, you can remove a bit of broth from the soup, add flour to it until it becomes a paste, then add it back in. \u00a0Let it cook a while before adding more, a little bit can go a long way, then eat.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>I didn&#8217;t get a picture of this.
