{"id":329,"date":"2014-11-22T05:03:42","date_gmt":"2014-11-22T05:03:42","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=329"},"modified":"2016-12-23T04:39:26","modified_gmt":"2016-12-23T04:39:26","slug":"mexican-rice","status":"publish","type":"post","link":"http:\/\/www.k7farm.com\/blog\/?p=329","title":{"rendered":"Mexican Rice"},"content":{"rendered":"<div class=\"ERIngredients\" style=\"color: #373737;\">\n<p>We enjoy cooking up this rice for our Mexican meals. \u00a0It&#8217;s good stuff! \u00a0I have also made this rice using <a title=\"Enchilada Sauce\" href=\"http:\/\/www.k7farm.com\/blog\/?p=240\">enchilada sauce<\/a> in place of plain tomato sauce.<\/p>\n<p>Ingredients:<\/p>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">3 tb vegetable oil<\/li>\n<li class=\"ingredient\">1 c long grain rice, uncooked<\/li>\n<li class=\"ingredient\">1 ts \u00a0fresh minced garlic<\/li>\n<li class=\"ingredient\">\u00bd ts \u00a0salt<\/li>\n<li class=\"ingredient\">\u00bd ts cumin<\/li>\n<li class=\"ingredient\">\u00bd c tomato sauce<\/li>\n<li class=\"ingredient\">1 &#8211; 14 oz. can chicken broth<\/li>\n<li class=\"ingredient\">3 tb finely chopped fresh cilantro (if desired &#8211; if I don&#8217;t have it, I don&#8217;t add it and the dish isn&#8217;t ruined in any way)<\/li>\n<\/ul>\n<p>Method:<\/p>\n<\/div>\n<div class=\"ERInstructions\" style=\"color: #373737;\">\n<ol class=\"instructions\">\n<li class=\"instruction\">Heat oil in a large saucepan over medium-high heat.<\/li>\n<li class=\"instruction\">Add the rice and stir until rice begins to lightly brown.<\/li>\n<li class=\"instruction\">Add the garlic, salt, and cumin and stir it in.<\/li>\n<li class=\"instruction\">Add the tomato sauce, chicken broth, and cilantro. \u00a0Boil, cover, turn heat to low and simmer 20-25 minutes or until rice is soft and water is soaked up.<\/li>\n<li class=\"instruction\">Remove from heat, fluff with a fork and enjoy.<\/li>\n<\/ol>\n<\/div>\n","protected":false},"excerpt":{"rendered":"\n<p>We enjoy cooking up this rice for our Mexican meals.
