{"id":1454,"date":"2016-02-08T01:34:41","date_gmt":"2016-02-08T01:34:41","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=1454"},"modified":"2016-12-23T04:39:27","modified_gmt":"2016-12-23T04:39:27","slug":"roasted-apple-chicken-thighs","status":"publish","type":"post","link":"http:\/\/www.k7farm.com\/blog\/?p=1454","title":{"rendered":"Roasted Apple Chicken Thighs"},"content":{"rendered":"<p>This is a pretty easy dish that comes together quickly.\u00a0 I chose to de-bone the thighs because they would cook quicker (it&#8217;s pretty simple if you&#8217;ve never done it &#8211; youtube has plenty of videos).<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>8 chicken thighs, deboned and skinned<\/li>\n<li>Salt and pepper<\/li>\n<li>1tb butter<\/li>\n<li>1tb olive oil<\/li>\n<li>4-5 cloves garlic, minced<\/li>\n<li>5c apples, peeled, cored and sliced<\/li>\n<li>1\/2 tsp. dried sage<\/li>\n<li>1\/2 tsp. cinnamon<\/li>\n<li>1\/8 tsp nutmeg<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 475F.<\/li>\n<li>Rinse chicken, remove any excess fat.\u00a0 Pat dry, then season both sides with salt and pepper.<\/li>\n<li>Heat a dutch oven or large, oven proof skillet over medium high heat.\u00a0 When the pan is hot, add the butter and olive oil.<\/li>\n<li>When the oil and butter are hot, add the chicken.\u00a0 You may have to do two batches in order to avoid over-crowding your pan.\u00a0 chicken should not touch.\u00a0 Let the chicken cook until they release from the skillet or until nicely browned.\u00a0 Then flip and do the same on the other side.<\/li>\n<li>Remove chicken.\u00a0 In remaining fat, cook the garlic until fragrant &#8211; about 30 seconds.<\/li>\n<li>Stir in apples.\u00a0 Add more fat if necessary to prevent scorching.<\/li>\n<li>Sprinkle seasoning on the apples.\u00a0 Stir to coat and combine.<\/li>\n<li>Add chicken back in, on top of the apples.\u00a0 Cover with lid, or a layer of aluminum foil.<\/li>\n<li>Place in oven and bake about 20 minutes, or until chicken is done.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This is a pretty easy dish that comes together quickly.
