{"id":1447,"date":"2016-02-06T06:43:54","date_gmt":"2016-02-06T06:43:54","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=1447"},"modified":"2016-12-23T04:39:23","modified_gmt":"2016-12-23T04:39:23","slug":"cider-braised-duck-legs","status":"publish","type":"post","link":"http:\/\/www.k7farm.com\/blog\/?p=1447","title":{"rendered":"Cider Braised Duck Legs"},"content":{"rendered":"<p style=\"text-align: center;\"><strong><a href=\"http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035.jpg\" rel=\"attachment wp-att-1448\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-1448\" src=\"http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-300x169.jpg\" alt=\"20160201_163035\" width=\"300\" height=\"169\" srcset=\"http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-300x169.jpg 300w, http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-768x432.jpg 768w, http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-1024x576.jpg 1024w, http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-150x84.jpg 150w, http:\/\/www.k7farm.com\/blog\/wp-content\/uploads\/2016\/02\/20160201_163035-400x225.jpg 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/p>\n<p style=\"text-align: center;\">Ready to go into the oven!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 duck legs, skinned<\/li>\n<li>salt and pepper<\/li>\n<li>1tb olive oil<\/li>\n<li>1 onion, finely diced<\/li>\n<li>1 garlic clove, minced<\/li>\n<li>1 carrot, peeled and sliced or diced<\/li>\n<li>2 small sticks of celery, finely sliced<\/li>\n<li>1-1\/2 c apple cider<\/li>\n<li>1tb <a href=\"http:\/\/www.k7farm.com\/blog\/?p=1445\">vincotto<\/a><\/li>\n<li>1 sprig thyme leaves<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Rinse duck legs off under cool water.\u00a0 Pat dry, then season with salt and pepper.<\/li>\n<li>In a heavy bottomed skillet or dutch oven, heat oil over medium high heat.\u00a0 When pan is heated, add duck legs and brown all sides.\u00a0 Remove and set aside.<\/li>\n<li>In remaining fat, add vegetables.\u00a0 Add another bit of olive oil if needed.\u00a0 Saute vegetables for 4-5 minutes or until soft.<\/li>\n<li>Remove vegetables from the pan and set over high heat.\u00a0 When pan is nice and hot but the drippings are not burning, add apple cider and scrape the bottom of the pan to release the brown bits.\u00a0 Reduce heat.<\/li>\n<li>Return duck and vegetables to the pan.\u00a0 Stir in vincotto and thyme.<\/li>\n<li>Reduce heat and simmer, covered, 1-1\/2 hours.
