{"id":1408,"date":"2016-01-07T00:45:56","date_gmt":"2016-01-07T00:45:56","guid":{"rendered":"http:\/\/www.k7farm.com\/blog\/?p=1408"},"modified":"2016-12-23T04:39:23","modified_gmt":"2016-12-23T04:39:23","slug":"chicken-with-garlic-bacon-and-wine","status":"publish","type":"post","link":"http:\/\/www.k7farm.com\/blog\/?p=1408","title":{"rendered":"Chicken with Garlic, Bacon and Wine"},"content":{"rendered":"<p>One evening I had some big chicken breasts left in the fridge.\u00a0 I needed to get dinner on the table fairly quickly so my husband could take the kids to their Wednesday evening activities at church.\u00a0 As I started thinking about what I had on hand to use, I remembered the chicken.\u00a0 And the open pack of bacon I needed to finish from the rabbit stew I made yesterday.\u00a0 And I brought in a bunch of garlic from storage.\u00a0 An idea began forming.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>olive oil &#8211; enough to coat pan plus about a teaspoon<\/li>\n<li>1tb butter<\/li>\n<li>chicken breasts.\u00a0 I used two large ones sliced thin into 4 fillets each, about 1\/4 or so inch thick.<\/li>\n<li>salt and pepper<\/li>\n<li>1tsp thyme<\/li>\n<li>about 20 cloves of garlic, peeled and roughly chopped<\/li>\n<li>1\/2 pack of bacon, chopped<\/li>\n<li>1\/2c white wine<\/li>\n<li>1\/4c water<\/li>\n<li>parmesan cheese, the real stuff, shredded<\/li>\n<li>parsley, for garnish<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat the pan over medium high heat.\u00a0 Once pan is ready, add the oil and the butter.<\/li>\n<li>Sprinkle salt, pepper and thyme over breasts.<\/li>\n<li>When the butter has melted and the oil is hot, add the chicken breasts a few at a time if necessary.\u00a0 The breasts should not touch to allow steam to escape.\u00a0 Cook until golden brown, 3-5 minutes.\u00a0 flip and cook the other side.\u00a0 Chicken should be cooked through if you are using thin cuts. remove and set on a plate for a bit.<\/li>\n<li>Add bacon to skillet and cook until bacon is cooked and fat has been rendered (liquified).\u00a0 Add garlic and cook until golden brown.<\/li>\n<li>Raise heat to high.\u00a0 Give the pan a minute to catch up, then remove the skillet from the stovetop and add wine.\u00a0 It will sizzle and steam\u00a0 &#8211; the alcohol is cooking off and the pan is delgazing.\u00a0 Scrape the bottom of the pan to release the browned bits.\u00a0 Add water and then add chicken back to the pan.\u00a0 It&#8217;s alright if the chicken touches now.<\/li>\n<li>Reduce heat and simmer until everything is heated through.\u00a0 If your chicken isn&#8217;t quite cooked through, simmer it until it is, turning occasionally.\u00a0 Allow the sauce to reduce a bit.<\/li>\n<li>Sprinkle parmesan cheese on top and place under the broiler for the cheese to melt.<\/li>\n<li>Garnish with parmesan and serve with pan sauce and bacon and garlic.<\/li>\n<\/ol>\n<p>The next time we make this, I am going to include caramelized onions in the pan&#8230;.\u00a0 And\/or serve it over pasta.\u00a0 This is a keeper &#8211; everyone loved it.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>One evening I had some big chicken breasts left in the fridge.
