Especially when it&#8217;s warmed under the broiler, atop a beautifully pan seared chicken breast that is perfectly browned and juicy on the inside.<\/p>\n<p>This is one of those things I don&#8217;t have a recipe for.\u00a0 I just season until it looks right.\u00a0 I will share my method though, which isn&#8217;t anything spectacular, really.<\/p>\n<p>I am a big fan of the small 5oz chicken breasts.\u00a0 Those huge breasts in the packages are just way too big.\u00a0 Even if you slice them in half, they still tend to have a rubbery texture and barely there flavor.\u00a0 If you use the thinner breasts, keep in mind that they cook up <em>quick<\/em> so be careful not to over cook.<\/p>\n<p><strong>Ingredients: <\/strong><\/p>\n<ul>\n<li>Chicken breasts<\/li>\n<li>Olive oil<\/li>\n<li>Garlic, fresh and minced.\u00a0 I like at least 4 cloves per skillet.<\/li>\n<li>Dried oregano<\/li>\n<li>Salt and pepper<\/li>\n<li>Lemon juice<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Begin pre-heating your oven around 425F to finish cooking chicken breasts if necessary.<\/li>\n<li>Rinse your chicken breasts, then pat dry.\u00a0 I don&#8217;t trim the fat because that lends flavor &#8211; but the breasts I use don&#8217;t have tons of fat on them.\u00a0 If your chicken breasts have a ton of fat on them, you may want to trim the obnoxious bits off. Once patted dry, season the breasts on both sides with oregano, salt and pepper.\u00a0 Set them on a wire rack until you are ready to cook them.<\/li>\n<li>Heat enough oil to lightly coat the bottom of an oven proof skillet (a tablespoon or two, depending on how large your skillet is).\u00a0 Over medium-high heat.<\/li>\n<li>Sprinkle in your garlic, so it will begin cooking.<\/li>\n<li>Place your chicken in the skillet and don&#8217;t move them.\u00a0 Moving them could result in tearing the outer &#8220;crust&#8221; that forms.\u00a0 This locks in juices.\u00a0 Be careful when first setting them in &#8211; you don&#8217;t want to crowd the breasts or they won&#8217;t brown properly, but you don&#8217;t want them too far apart either.\u00a0 About half inch is fine.<\/li>\n<li>Don&#8217;t touch your chicken until you notice white forming on the outer edges of your chicken.\u00a0 Then, slowly start poking at your chicken.\u00a0 When the crust has formed it will release its self from your pan if all goes well.\u00a0 Too high of heat, too little oil, can all result in chicken sticking and burning.\u00a0 Once chicken has released its self, it&#8217;s safe to flip.\u00a0 You should see a nicely browned surface.<\/li>\n<li>Sprinkle in some lemon juice.\u00a0 It will steam and splatter.\u00a0 It&#8217;s ok.<\/li>\n<li>Once flipped, cook for another 4-7 minutes depending on how thick the breast is.\u00a0 Again, once the crust has formed it will release its self from the skillet.\u00a0 When this happens, sprinkle feta cheese all over the chicken until your heart is content, then place the skillet in the oven for about 3-5 minutes.\u00a0 The chicken will finish cooking and the feta will soften.<\/li>\n<li>When you remove the chicken from the oven, place a lid over it and let it rest for a few minutes before you cut into it.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p> #gallery-2 { margin: auto; } #gallery-2 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 33%; } #gallery-2 img { border: 2px solid #cfcfcf; } #gallery-2 .gallery-caption { margin-left: 0; } \/* see gallery_shortcode() in wp-includes\/media.php *\/ Pan seared chicken breast.
