Open Faced Chicken/Turkey Sandwiches (leftovers)

After our Thanksgiving feast (And also any time we roast a chicken – this works out best for both birds), our family has a tradition of making open faced sandwiches from all of our leftovers.  It’s quite simple really – lay a piece of bread on a plate, add some turkey or chicken and gravy to it, pile on some mashed potatoes and more gravy, maybe some corn and stuffing, and dig in.  It comes together to be a very easy and very quick use of some of those leftovers.
