Parmesan Lemon Zucchini


  • 3tb butter
  • 2 garlic cloves, minced
  • 4 medium zucchini, sliced thin
  • 1/2 ts thyme
  • 1/4c parmesan cheese
  • 2tb lemon juice


  1. Preheat oven to 400F
  2. Melt butter over medium heat in an oven-proof skillet.  Once melted, add garlic and cook until it begins to soften – only about 30 seconds or so.
  3. Add sliced zucchini and thyme.  Mix frequently until all pieces are coated with butter, then cover and bake until zucchini is soft – about 20 minutes or so.
  4. Remove from oven, sprinkle on parmesan cheese and sprinkle lemon juice.  Enjoy!
