Crockpot Ham and Scalloped Potatoes

This is one of our standard meals for using up leftover ham.


  • 6c potatoes,  cubed
  • 1 medium onion, minced
  • 1 ts salt
  • 1/2lb cooked ham, cubed
  • 4tb butter
  • 4tb flour
  • 1ts salt
  • 2c milk
  • 1-1/2c shredded cheddar cheese


  1. Layer potatoes, onion, salt, and ham.
  2. Melt butter in a saucepan over medium heat.  Stir in flour and salt.  Whisk well and cook until well combined and bubbly.
  3. Gradually add milk.  Stir constantly. Once the mixture begins to thicken, remove from heat and add cheese, little bits at a time and stir to melt.
  4. Pour cheese sauce over potatoes and ham.
  5. cover and cook on low 6-7 hours or on high for 2-4 hours.

If you use cooked potatoes, this cooks quickly.
